Chicken and Veal Sausage (per lb)
Chicken & veal combination is enhanced with the classic flavour of tarragon. BBQ: preheat BBQ to 500°F or higher, sear, then reduce temperature to 300°F to cook. Oven broiled: preheat oven to 400°F, sear, then reduce temperature to 325°F to cook. For sautéeing: apply oil to pan, sear on high heat, then reduce to lower heat to cook. Any methods mentioned above, use a meat thermometer to ensure an internal temperature of 74°C (165°F) is reached for at least 15 seconds.
